Ingredients:
-2 cups of flour (whatever you have)
-1 cup of warm water
-2 tablespoons olive oil
-1.5 teaspoons of instant yeast
-1 pinch of salt
-1 tablespoon sugar
Note: Extra flour for kneading so that it does not stick.
Preparation:
-In deep dish dissolve yeast in warm water and add sugar. Let stand for about 5 minutes
-In a large bowl place part of the flour, leaving about 5 separate tablespoons of flour to be added to the dough later.
-Mix with a wooden spoon from the center outwards and little by little mix the yeast with the flour.
-Add the olive oil and salt. It is important that the salt and the yeast do not come into direct contact so as not to have problems in the fermentation process.
-Continue mixing what is starting to become dough.
-While the dough is still sticky, add more flour.
-Make a ball and let it rest for 1 hour to rise.
-On a flat surface sprinkle a little flour and with the help of a rolling pin roll out the dough.
Beyond the dough...let's go with the sauce
In a pot with boiling water place 8 medium sized tomatoes, when the skin starts to come off, remove from the heat and run them under cold water, to be able to peel them better. Then, in a pot over medium heat place oil (olive or corn) and when it is hot put an onion chopped into cubes and two cloves of crushed garlic; stir until they crystallize.
Then add the tomatoes and crush them with a wooden spoon; add a spoonful of tomato paste, salt, pepper, oregano and sugar. Continue adding half a cup of water, and finally add some basil sprigs. Stir everything and leave the pot covered for 10 minutes or until it boils to finish cooking the sauce.
Then remove from the heat and let stand for a few minutes. If you like the sauce with pieces of tomato and onion, leave it like that. But if you prefer it to be liquid, blend it in a blender and you have your tomato sauce for pizza! It is up to your taste what you want to add to garnish and enhance the flavor: ham, cheese, corn, olives, etc.
